威士忌最迷人之處,莫過於它擁有千奇百怪、變化多端的風味。艾雷島上出產的泥煤威士忌個性更為強烈鮮明,融合了粗獷豪邁的煙燻味以及海洋的鹹甜碘味。

在威士忌酒的製程中,麥芽需要經過烘烤的步驟,「泥煤」就是用來燃燒生熱的主要燃料來源。在烘烤煙燻過程中,隨著熱氣上升,泥煤中的分子會和麥芽作用並產生「酚」,隨著接下來的蒸餾進入酒液中,傳統蘇格蘭威士忌中的「泥煤味」便是由此而來

泥煤燻製麥芽所留下的「酚」,是以「ppm」表現衡量碳酸值的多寡,1~10ppm屬於輕度泥煤、10~30ppm屬於中度,到了30~50ppm,就是重度泥煤了。

Islay Whisky
Islay is very largely composed of peat, layer upon layer of spagnum mosses and other vegetation have been rotting away and created the compact black banks of peat which are used for home fuel and for the whisky industry.

Peat smoke produces contains chemicals called phenols and these phenols are absorbed by the malted barley during the drying process in a kiln. Phenols Once finished, the malt is taken away for mashing and the phenol level is measured. This level is known as the PPM – Phenol Parts per Million.
